Macaroni with aubergine and tomatoes
Ingredients: 2 middle-sized aubergines (about 500g/1 pound), salt, pepper, 500 g/1 pound of tomatoes, 2 cloves of garlic, 3-4 pieces of basil or grinded basil, a half or a whole piece of chili pepper, 8 spoonfuls of olive oil, 400g/a little less than 1 pound of egg-free macaroni pasta.
Wash aubergines and tomatoes, remove the stems of the aubergines. Cut them into smaller cubes, put them into a bowl and salt them for 30 minutes. Throw the tomatoes into hot water for 2 minutes, then into cold water. Remove their skin, cut them into stripes. Peel the garlic, wash the basil down, shake the water off the basil, remove the leaves. Wash the chilli peppers, remove the ribs and the seeds partly, cut them into small pieces. Wash the aubergines down, push the water out of them well. Fry them in a deeper, non-stick pan, in 3 tablespoonful of hot oil, stirring it continuously. Then take them out of the oil, put them aside. Pour them remaining 5 tablespoonful pf oil into the pan, wilt the crushed garlic in it, then add the tomatoes, the peppers, and the 90 percent of the basil. Add salt, pepper according to your taste. Boil this for 15 minutes, on mild fire, with a cover, covering the pan only partly. Finally add the aubergines with careful stirring. Boil the macaroni, filter it, gently put and stir it with the sauce. Put it into a pre-warmed up, deep bowl (you can spring it with washed and almost dry olive berries and a few more cloves of tomatoes), then in the end add the remaining portion of basil(the fresh basil with leaves is the best-looking). Serve it with love. Good appetite!
